2015 Sauvignon Blanc Semillon

Harvest Date 23/02/2015
Baume at Harvest 11.6 Be (Sem: 11.0 Be)
Winemakers comments Machine harvested in the cool of the night, cold crushed to press, where the juice is immediately separated from the skins. Cold settled for 2-3 days, after which the clear juice and light solids are removed from the heavy solids. Fermented in Stainless Steel and/or French Oak. Ferment occurs at 12 deg C (cold ferment) in order to preserve freshness.
Maturation Aged in either Stainless Steel on lees for 4 -5 months before bottling. Battonage of barrels and tanks occurs every 2 weeks.

, Nick Butler, The Vindependent, Aromatic scream of lemon and lime - there's a grigio pear character in the mix. Oak has softened the edges - there's a spargey spritz freshness to the wine which gives great lift to the fruit and acid. I find no grassiness here - it's ripe and balanced. Very well made.
