2021 Knee Deep Cabernet Sauvignon

COLOUR  Garnet red with cherry red hue.

NOSE  Lifted aromatics of blackcurrant, raspberry dust, dried thyme, bay leaves and nutmeg spice. 

PALATE  A generous palate with dark choc, Chinese salted plum and cinnamon flavours. There is a freshness to this wine, and quite a tight, yet fine tannin structure that gives structure and length. 

WINEMAKING   Fruit was harvested when flavour, tannin and acid were all in balance. Fruit was fermented to retain fruit freshness and juicy flavours, natural tannins supported by French oak influence and a fresh acidity which come together to produce a Cabernet Merlot for short term cellaring or immediate drinkability.

VINTAGE NOTES  Margaret River enjoyed a warm, dry Summer with vine canopy management crucial to ensuring fruit quality was retained as the region experienced a couple of extreme rain events. Our white wines are displaying vibrant varietal characters and a bright natural acidity, while the reds are showing more elegant flavours and aromas from this challenging vintage. All in all, the 2021 wines will all have superb flavour, structure and balance.
