COLOUR Garnet with a cherry hue.
NOSE Very cohesive nose with aromatics of red fruits, mulberries and liquorice all jumping out in balance with one another.
PALATE A very elegant wine with dark yet savoury characteristics, salted plum, dark chocolate, liquorice and savoury spice. Fine tannins work together with the acid to provide a tight frame for the fruit, driving the wine through to a long, moreish finish.
WINEMAKING Fruit was harvested when flavour, tannin and acid were all in balance. Fermented using select yeast in static ferment where it was pumped over daily to manage the fermentation & tannin extraction. It was then pressed off into tank, settled then transferred to French oak barrels. Careful barrel selection brought together rich fruit, firm tannins and a tight acidity to come together beautifully, producing a Cabernet of great structural integrity and one that will reward careful cellaring.
VINTAGE NOTES 2020 was a warm and dry vintage, however a wetter than average winter set us up well for this. The growing season started off with a warm spring followed by a hot summer. We did have one significant rain event late February which slowed down the reds and allowed for ripening of tannin and flavour to catch up with sugars. The warm and dry conditions reduced disease pressure, this also resulted in ample marri blossom around the district which eased the bird pressure experienced in 2019. Yields were low across the board, but on the upside this resulted in excellent quality with concentration of flavour across all varieties.
